Drawing on inspiration from America and its immigrants, Chef Mendes globally inspired menu incorporates some of the freshest flavors of spring – from asparagus and fava beans to spring peas and ramps and everything in between.

With an emphasis on fine and local purveyors, Chef Mendes sources his ingredients from a variety of vendors including Norwich Meadows Farm in Chenango County, NY (nasturtium, baby broccoli, baby lettuce), Mountain Sweet Berry Farm in Roscoe, NY (baby potatoes, ramps) and NYC’s Union Square Greenmarket (a variety of additional produce). Proteins include grass-fed, dry-aged beef from Creekstone Farms and free range, organic chicken from Pennsylvania via D’Artagnan.
